Almond and panko-crusted New England Scrod
My finest culinary creation yet, I think! I went to the local gourmet market intending to buy a chicken breast or some tofu, but I was drawn to the wonderful-looking New England Scrod that was obviously very, very fresh. I haven't cooked fish in, oh, 2 years if not 3, but it looked so good, I decided not to let a small thing like that stop me!
I got home and began putting together my mise en place, but couldn't find any panko crumbs! In my mad dash through my pantry, I came across a bad of slivered almonds I had forgotten about, as well as my panko crumbs (whew!). I took a quarter of a serving of almonds and pulverized them in my mini-food processor, and added them to my panko. The result: absolute perfection! Delicious crisp with a subtle almond flavor that pairs nicely with the fresh lemon juice and spice blend I added.
